The Cuvée Violette owes its name to its hallmark floral aromas and it is an homage to Damien Courbet's oldest daughter. The widely celebrated 2015 vintage was no stranger to the Jura and the Cuvée Violette is perfectly ripe with a deep ruby core. The pronounced dark red fruits and spice character show early. As it opens up, those aromas sharpen into savory raspberry, griotte cherry and a touch of cracked black pepper. There is a depth and richness to the Violette along with a crunchiness to the fruit that are superbly balanced by refined tannins and refreshing acidity. The Violette drinks beautifully right now and will easily cellar and gain complexity over the next 10 years. This cuvée ages in 6-8 year old barrels for a year. Then it rests for six months in stainless tank before bottling. Organic.
