100% Savagnin in all its indigenous glory. This wine is aptly named Blue Earth as the vines are planted on blue marl soil in Arbois from the 15 and 35 year old vines in the parcels la Régole and la Rivière. Fermented using indigenous yeast in oak and aged for 12 months in 20HL foudre -- the first time bigger barrels have been used for this wine. The Terres Bleus is made in a fresh or ouillé style, so during its time in foudre, it is “topped up” to keep oxygen from coming in contact with the wine. AJ does not stir the lees or rack this wine during its aging. As a result a fresh, stony, floral, citrus character and a touch of salinity grace this Savagnin, which even in warmer years like '15, retains its natural balance and freshness. A complex bitter finishing note (almond skin like) that only adds to the enjoyment of this beauty.
