100% Chardonnay with almost 80% of the blend from the premier cru village of Bisseuil and 20% from the grand cru village of Avize (grand cru). This Avize parcel is from the tiny walled vineyard, Clos des Maladries, which we previously mentioned in Étienne’s producer profile. All of the juice in this bottling is from the 2012 vintage with only the heart of the pressing (the highest-quality portion of juice from the middle of the pressing, excluding the first and last portions pressed) making it into the blend. The average age of the vines in this blend is nearly 30 years and they sit on soils predominantly of limestone and chalk with south and southeast exposure. 15% of the wine was fermented and aged in used Bereche barrels and the rest in stainless steel. The wine was bottled in April 2013, spent almost 30 months sur lie and was disgorged in September 2015. Dosage of 6 g/l.
A light gold robe showcases a rich, feminine, finessed wine with fine bubbles and very present chalky minerality and a touch of smokiness. White flowers, citrus and yellow fruits appear on the palate along with a touch of yeasty expression to round out the experience. As we’ve said before, we think Champagne and other sparkling wines have great versatility and so it is with the Infiniment Blanc. No hesitation with cold appetizers like vegetables, terrines or goat cheeses and then moving on to almost anything seafood oriented, for example, mussels, clams, shrimp, oysters, lobster, ceviche, fresh or saltwater fish. Not in a seafood mood, the dosage on this wine makes it a great match with spicier cuisine from Asia or India. Get a case, drink one shortly after they arrive, another for Thanksgiving, and one around New Year’s Eve. Lay the others down and repeat for the next four years. You actually may need two cases because there are too many days in between when this wine should be on your table.
