100% Timorasso from a combination of sites of clay and limestone. Eight months in stainless steel and another seven in bottle before coming out to play. Both this wine and the Cortese are pressed while the grapes are still on the stems. The wine doesn’t see any other skin contact. Conditions in the cellar are such that the whites naturally don’t go through malolactic fermentation. Nothing is done to manipulate that outcome. It’s just what nature decides. So the whites are fresh and lively with added richness, particularly in case of the Timorasso, coming from the time the wine ages on the fine lees. Complex, intense, orchard fruits, citrus and white flowers married with a honeyed note and beautiful balancing acidity and flinty minerality. There are myriad pairing opportunites here. Use your imagination from the simple to the fancy. This wine can play a number of different roles at lunch or dinner.
