A classic in the making. Long, slow fermentation, followed by 36 months in large, old Slavonian oak casks (30 and 55 hectoliter), and finished in bottle for a year before release. Brilliant ruby red. Wonderfully aromatic. Certainly no wilting flower with persistent, structured Nebbiolo tannins that portend a long, graceful aging arc. The highly acidic soils on which this Nebbiolo grows provide great energy and brightness. Early in its life, today it shows tar, roses, soy, herbs and rocks. Time will be kind to this bottling as it continues to express it beauty. A healthy decant is in order if you decide to bring it to the table in the near term. Braised meats -- short ribs immediately spring to mind, beef stew, leg of lamb or chops, game, mushrooms, truffles, root vegetables all should be beautiful accompaniments.
