Variety(ies): Cabernet Franc
Although only the second vintage produced by Fiona, it rivals some of the finest wines in Chinon and harkens back to traditional Chinon, in a very positive way. The 2012 is elegant, yet shows sneaky power. Red fruited in the cherry and cassis sense with notes of tobacco, pepper, fresh herbs and stony minerality. There is a richness on the palate that is buoyed by exceptional acidity to keep it fresh and lively. The tannins are silky and integrating nicely. The finish is long, complex and has great grip. This wine should keep well into its late teenage years and make 20 if kept well. That said, get several bottles because it’s worth a look much sooner. Fiona feels it needs an energetic decant to open up and likes to see it served at cellar temperature and allowed to warm on your lunch or dinner table. I strongly suggest you heed this serving advice. In fact, if you don’t and Fiona finds out about it, I’m fairly certain we won’t be able to sell you her next vintage. She is that meticulous. The 2012 will pair beautifully with grilled and roasted meats, including rib steak, veal and free-range chicken. There is a lot to work with here.
