Vincent Dampt Vaillons Chablis 1er, 2014

Variety:  Chardonnay

The fullest bodied of Vincent’s quartet, but don’t assume that means it will be a heavy wine. Its presence will certainly be made known, but again the superb raw material, orchard fruits and salinity that grace this offering makes it a model of balance. The finish on this wine lingers and keeps calling you back. May not make as old bones as the Lechet but still a decade of graceful evolution in this vintage. Want to watch the fireworks explode on this wine. Find some fresh scallops, sear them, lightly coat them in flour, broil them, do whatever you want to them other than cook them too long, and pour this alongside.
