Citrus, white peach, a hint of lanolin and a mineral streak work magic in this lovely, focused Chenin Blanc. Mostly from old vine Chenin grown on limestone on top of tuffeau. Barrel fermented and then aged in oak barrel (30% new) for 12 months. It rests another three months in vat before going into bottle. There is great structure on this wine that makes it very versatile for pairing as it can go from richness to naturally salty fare (think about it as working with anything that has a cream or stock).
