From the heart, the couer de cuvée to be exact. Only the heart of the juice that is directly pressed is used in this gorgeous Rosé Champagne from our friend Etienne Calsac. A blend of 86% Chardonnay and 14% Pinot Noir. The Chardonnay is from Bisseuil and Avize and the Pinot Noir is from the Montagne de Riems. Seven months on the lees for most of this 2014 juice with the other 10% in used oak before assemblage and bottling. If the color alone doesn’t captivate you, the red berries and minerals that dominate this fresh, energetic rosé certainly will. Crisp and lively. A finely, sweet mousse. Around 7g/l dosage to balance things out. As an aperitif, or with fish, chicken, pork or lighter pasta dishes. Only 1300 bottles produced.
