Variety(ies): Pinot Grigio, Chardonnay, Sauvignon Blanc
The flagship La Castellada Bianco della Castellada. A blend of 50% Pinot Grigio, 30% Chardonnay, and 20% Sauvignon Blanc grown on clay and limestone. The grapes come from vines that on average are over 30 years old. The Pinot Grigio was picked, pressed and spontaneously fermented. The Chardonnay and Sauvignon Blanc were destemmed and each spent four days fermenting on the skins in Slavonian oak . Almost a year in aged barrique rounded out the aging process. Layered complexity in the glass. Wonderful depth. Peaches, pears, spices, flowers, blossoms, fresh herbs (mint and thyme) and minerals. Knit together perfectly at this point. A long finish that fills all the senses. Served too cold and you’ll miss the true glory of this benchmark Friulian white.
