A compelling wine and one that will only continue to climb in stature. A real over-achiever, under-the-radar, insider gem! The 25% new oak has all but been absorbed by the rich, red fruits, asian spices (presumably from the rich iron soils of Pernand-Vegelesses) and sous bois character. When first tasted in April 2016, I was taken by this bottle with its structure and complexity. Tasting it again in January 2018, the tannins which were chewier in its youth, have softened and the original veins of acidity and minerality make this a very complete premier cru red Burgundy. It paired perfectly with a Coulotte roast (aka top sirloin cap) that was prepared like duck breast --the fat side was cooked slowly on low heat in a cast iron skillet and then crisped up at higher heat -- with a sauce périgourdine (beef demi, chopped black truffle, madiera and butter) and duck fat roasted potatoes.
